Diner: Mashed Potatoes

Introduction

Who can say no to mashed potatoes?

Ingredients

  • 2 Baking Potatoes
  • 2-3 T Half and Half
  • 2 T Butter
  • Salt and Pepper

Directions

Trim the fat and gristle from the meatPeel the potatoes.
Pound the meat under a baggieSlice them into pieces
The meat is evenly thin Boil them for 10 minutes.
Add a T of cornstarch to a bowlDrain the potatoes.
Add a T of Dijon MustardAdd the potatoes back to the pan if using a masher. Put through a ricer, if you have one, instead.
Blend the Mustard and the cornstarch into a pasteMash the potatoes.
Add a cold cup of beef broth and stir till smoothAdd 2 T butter. Mash.
Add a cold cup of beef broth and stir till smoothAdd 1 - 2 T Half and Half. Blend.
Chop the scallionsServe.
